Product Details

Ricotta (whey, milk, salt, acidity regulator: citric acid), mushrooms in variable proportions 21% (Agaricus Bisporus, Pleurotus Ostreatus, Lentinus Edodes, Pholiota Nameko), breadcrumbs (type “0” soft wheat flour, water , salt, brewer's yeast), porcini mushrooms 8% (Boletus edulis and related group), Grana Padano DOP (milk, salt, rennet, egg lysozyme), sunflower seed oil, salt, garlic.


May contain: mustard, soy.
Ingredients for 4 people
12 Raviolacci with porcini mushrooms
43 g of restricted demi glace
FOR THE PARSLEY SAUCE
2 bunches of parsley
EVO oil, salt, water to taste
FOR THE CARROT FOAM
40 g of boiled carrots
20 g of fresh cream
3 g gelatine sheets
FOR THE PECORINO CRACKERS
12 g of grated Filiano pecorino DOP
FOR THE CARROT FOAM
Blend the carrots with the cream, egg white, salt and pepper. Bring to 55°C and add the rehydrated gelatine, filter and fill the siphon with two loads. Keep warm.
FOR THE PARSLEY SAUCE
Place the oil, parsley, salt and water in a pacojet glass, freeze at -18°C and pacotize. Repeat the same operation three times. Pass through a sieve and store under vacuum.
FOR THE PECORINO CRACKERS
Sprinkle the pecorino on a sheet of silpat and cook in the microwave at maximum power for about 1 minute. Create circles with a pastry cutter and leave to cool.
FOR THE BACON
Place the bacon, oil and all the aromas in a vacuum cooking bag. Seal and extract the air. Cook in a roner at 65°C for 12 hours. Quickly lower the temperature, with the help of a blast chiller, eliminate all the excess oil and aromas. Cut into regular cubes and brown them in a non-stick pan. Be careful to dry off excess grease. Keep warm.

All orders outside of Manchester are delivered by our partner, ParcelForce.  We don’t deliver on Saturdays and Sundays and the orders sent via ParcelForce can’t be delivered on Mondays.
